Pheasant Cooking Demonstration with Lukas Leaf

An outdoor cooking demonstration at Schram Vineyards focused on innovative ways to prepare pheasant meat using the entire bird. Hearty tastings of two dishes will be provided. Links to a list of Lukas’ favorite pheasant and wild game recipes on MeatEater, Modern Carnivore, and Pheasants Forever’s websites will also be distributed. Lukas will be front and center cooking and answering attendees' questions on the preparation of wild game and foraged ingredients.

About the Chef: Lukas Leaf is a Minnesota-based chef with Modern Carnivore. He was previously Executive Chef at the award-winning Al Vento restaurant in Minneapolis. He strives to use local, seasonal, sustainable and wild ingredients in his cooking whenever possible. Lukas is an avid, passionate outdoorsman and an active member of Backcountry Hunters & Anglers.
